Pondering.... on these thoughts makes the gloomy days seem brighter. Frees my heart, mind and soul.
It was a good idea to invite my mother over for lunch, however its even better when I have a plan of what I’m going to serve. I was thinking along the lines of having something easy with just a bit of flair….what would that be …..not sure. So, my quest this afternoon is to find just the right meal to prepare. I ran across this recipe for Bacon and Double Cheese Quiche. Lets see what goes into making this lovely delightful dish.
30 minutes to prepare, 30 minutes chilling, 45 minutes baking.
Makes 8 servings
Crust: 1-1/3 cups all-purpose flour, 1/8 teaspoon salt, 1/2 cup chilled butter, cut into small pieces; 2-3 tablespoons cold water
Filling:
10 strips lean bacon (I would probably use lean turkey bacon), 4 large eggs, 1-1/2 cups light cream, 1/4 teaspoon dried thyme, 1/8 teaspoon white pepper, 1/2 cup shredded Gruyere cheese (I’ve never heard of this cheese, does anyone know what it tastes like?); 1/2 cup shredded white cheddar cheese
(sounds good so far! I would probably have to reduce the amount of cheese the recipe calls for…or just don’t consume too much. )
1. To prepare the crust, in a large bowl, mix together the flour and salt. Using a pastry blender or 2 knives, cut into the butter until coarse crumbs form.
2. Add water, 1 tablespoon at a time, tossing with a fork, until a dough forms. Shape into a disk, wrap in plastic wrap and chill in refrigerator for 30 minutes.
3. Preheat oven to 375 degrees. On a lightly floured surface, using a lightly floured rolling pin, roll the dough into 11-inch circle. (I don’t know, would all this work be worth it?!) Fit into a 9-inch pie plate. Trim edge, leaving 1/4 inch overhang. Fold under to form standup edge. Prick dough with a fork. (Ouch.) Line with foil and fill pie weights or dried beans.
4. Bake for 10 minutes. Remove the foil and weights. Bake until lightly golden, about 5 minutes. Transfer to a wire rack to cool. (Really, is this worth all the time and effort?) Uh…huh. ;)
5. Meanwhile, I’ve decided this may not be worth all the time that goes into making this…..I’ve given up on typing out the rest of this….. the picture of the finished food looks very wonderful. But really….. ….. I think I’m getting tired and maybe just a little bit hungry too…. so okay….here’s the rest of the recipe! LOL
5. Meanwhile, prepare the filling. In a medium skillet, cook the bacon over medium heat until crisp, 8 to 10 minutes. Transfer to a paper towel to drain.
6. In a small bowl, whisk together the eggs cream thyme and pepper. Pour into crust. Crumble bacon. Sprinkle the egg mixture with the bacon, cheeses. Bake until golden and custard is set, about 30 minutes. Serve warm. And give yourself a healthy pat on the back for doing a wonderful job!! :O)
Lately I’ve been in the mood to research movies… I wasn’t sure if I had one of the movie titles correct. I originally thought it was titled “Rearview Window” ….instead its called “Rear Window” starring James Stewart, Grace Kelley. I’m also a fan of Audrey Hepburn flicks. Charade starring Audrey with Cary Grant is a fine movie…it does have some dull moments, but its still filled with enough suspense to keep you on the edge of your seat. The Audrey Hepburn Story…is such a good one to see…I actually own this movie. Jennifer Love Hewitt (in the starring role). This story is centered around the struggles, triumphs and tender romances of the beloved star, (Audrey Hepburn). Look for this movie and all your favorites on Amazon.com.
I would rather be outside in the garden or riding my bike~but considering it’s below freezing I must find something to occupy my time indoors. During the day, I’ll spend a little time on the internet, visiting my favorite sites…or working on laundry (everyone’s favorite pastime) LOL. My day time isn’t usually filled with much drama…not like it used to be when I was still teaching…now there’s drama! ;) Now, some of the drama comes from watching movies. I’ve had the blessing of Netflix, but that must go away for a time….so I won’t have too many withdraws…I (finally) checked out Amazon.com to find some of my favorite flicks … Robin Williams in RV; Mercy Mission of Rescue Flight 771; Mickey Rooney stars in Andy Hardy. I have lots of favorites including: The Money Pit; That Thing You Do; 84 Charring Road; Swing Shift; Julie & Julia *note* I heard the book wasn’t all that well written, instead of using vocabulary to best describe something, the author used vulgar language…which isn’t all that impressive. More flicks include: The Left Behind Series; most of all the Hallmark favorites~ What I Did For Love, etc…; Love is a Many Splendor Thing…*I liked William Holden in this movie*…; Cary Grant in Walk, Don’t Run; An Affair to Remember; Alfred Hitchcock thrillers like: Rearview Window; The Man Who Knew Too Much; ….a friend recommended Dial M for Murder…but we thought it was too “gabby”.
The Sound of Music…is the best of the best…for musical score…and splendid dancing. I like a good movie that makes me want to twirl around the room . I absolutely loved the series Anne of Green Gables… I first “heard” this movie on radio! We didn’t have a television set up…so hubby hooked up a connection to the cable that was sticking up in the floor of the mobile home…I remember…listening for hours…as the story played out…it was magical.
It seems this subject could go on forever…well almost! ;) I feel that I may have given you all the wrong impression of my daily life…it isn’t always “movie day”…and it isn’t always laundry…its many other things too. I have a business to take care of…making candles and foot butters. Even in this day of computers and email, I still find that letter writing is a good way to communicate. When flowers are in bloom and butterflies are flitting here and there…you will find me sitting among the flora snapping pictures.
